I finally done and did it! I made the famous ‘Microwave Masala peanuts’. I have seen it across so many blogs and always have bookmarked it, but finally I got to make these yesterday. With summer finally here in Seattle, it has been a happy but hot weekend. I was feeling reluctant to go stand by the stove to make a quick snack and remembered this recipe. It is so relieving to make a crunchy, munchy snack that involves no work by the stove. It is a super quick and easy recipe and I am happy with the outcome.
Ingredients:
1 cup of skin on raw peanuts
2/3 cup besan, gram flour
1 tbsp corn starch
2 tbsp rice flour
1 tsp fennel powder
1 tsp cumin powder
1 tsp chilli powder
1 tsp garam masala
1/2 tsp turmeric
1 1/2 tsp salt(or to taste)
3 tbsp canola oil
2 – 3 tbsp water
Method:
Whisk the gram flour, corn starch, rice flour, fennel powder, cumin powder, chilli powder, garam masala, turmeric and salt together. Toss the peanuts in this mixture. Pour in the canola oil and mix to combine. Add the water, a tbsp at a time, mixing to ensure the mixture coats the peanuts.
Break it apart and place in a microwave safe plate. Cook on high for 2 minutes. Remove(use a kitchen towel/oven mittens, the plate gets hot), break the clusters apart and return to the microwave. Cook again on high for 1 minute. Use just enough peanuts that will sit on a single layer on the plate. I used a regular dinner plate and had to cook the peanuts in two batches.
Let cool completely and store in an air tight container. The rest time of about 10 minutes is very important. DH popped one in his mouth while photographing and asserted this was a flop. I promised him he would reverse his statement after 10 minutes and he did. 🙂
Verdict: Super awesome snack and in 3 minutes, eh..well…5 minutes total, inlcuding the prep work. But still, an awesome snack to add to the repertoire, especially good to take on picnics and summer trips. Much healthier than potato chips anyway. The peanuts were crunchy, spicy and awesome to munch on.
