Idiyappam is my husband’s all time favorite tiffin item. But, I don’t make it very often. But, I found a healthy version of idiyappam at Nithu’s blog which replaces half the rice flour with healthy ragi flour. I made this recipe, this week and we absolutely loved the taste and texture of the idiyappam. It went perfect with sweetened coconut milk.
Ingredients:
1 cup ragi flour
1 cup rice flour
2 cups (approximately) water
pinch of salt
non stick cooking spray
Method:
Bring the water to a rolling boil. Place the ragi flour, rice flour and the pinch of salt in a bowl. Pour the boiling water in the bowl and mix with a wooden spoon until the flour comes together in a ball…Knead and place in a idiyappam press sprayed with the non stick cooking spray. Press into thin squiggly threads and place in a steamer. (I used the steamer insert from my rice cooker). Steam for about 7 minutes until it is cooked through.
Serve hot with a sprinkle of sugar and coconut or doused with coconut milk.
Verdict: Sweet, satisfying and healthy. Now thats not an easy combination to achieve. 🙂
