When I saw the that the Mediterranean Cooking Event was featuring ‘France’ this month…I was super elated. I was always wanted to make a recipe from Julia Child’s ‘Mastering the Art of French Cooking’ and was looking for a perfect chance to do that. This event was just that – a prod in my culinary mind.
Now, wanting to cook a recipe by Julia Child is one thing…attempting something and having it turn out the way Julia says it should be, is another. I was speculating on which recipe to pick…and landed on ‘Crepes’. Julia’s “Master Crêpe Recipe” to be exact. I followed her recipe exactly…except that I added about a tsp of vanilla to my crepe batter.
Although I ended up throwing out my first crepe…(that was my ‘test crepe’ 🙂 ), I still had about a dozen crepes left from the batter made as below.
Ingredients:
1 cup flour
2/3 cup cold milk
2/3 cup cold water
3 large eggs
1/4 teaspoon salt
3 tablespoons melted butter, plus more for brushing on pan
1 tsp vanilla(my addition)
Directions:
Mix all ingredients until smooth in a blender or with a whisk. (I used the blender) Refrigerate.(for 30 minutes)
Heat a non-stick frying pan over medium heat. Brush with melted butter.(Important: this is why I lost my first crepe, 🙂 )Pour in 2 to 3 tablespoons of batter into the center of the pan and then tilt the pan in all directions to cover the bottom evenly. Cook about 1 minute, or until browned on the bottom. Turn and cook briefly on the other side.Cool on a rack or plate as you finish making the rest. Serve as desired.
I served some as is(I was taste testing, 🙂 ) and some just with a sprinkle of powdered sugar. One I did a chocolate banana, with some nutella spread. I have taken more pictures..and will update this post sometime later this week. For now, I leave you with some very basic pictures.
Verdict: As for the taste, it was buttery, soft and feathery. Rich and luscious. Just what a crepe should be. I always say that the French sexy up any ordinary thing we know…and the crepe is a sexy pancake. 🙂 Thanks to the French and to Julia Child. 🙂
