I had actually made this for ‘No Croutons Required – Carrot’. I didn’t know of the rules that only one entry is allowed per blogger. I really loved this salad, as it was so sweet and fresh and almost made me feel like I was eating dessert. It is very simple to put together and made for a really great lunch.
Ingredients:
2 carrots grated
5 scallions, sliced on a bias (both green and white parts)
3 tbsp toasted chopped cashews
1/4 cup feta cheese, crumbled
1 tbsp lemon juice
1 tbsp extra virgin olive oil
1 tsp red pepper flakes
salt to taste
Method:
Make the dressing by whisking together the lemon juice, olive oil, salt and red pepper flakes. Set aside.
Combine the carrots, scallions and cashews in a bowl. Toss this mixture with the prepared dressing. Top with the feta and serve as is or serve cold.
Verdict: Salty, sweet, spicy and crunchy. This is my favorite carrot salad now. The feta makes it salty, there is a buttery crunch from the cashews and the spicy kick from the red pepper flakes is balanced by the sweetness of the carrots. A very easy and tasty salad.
